Well, I honestly think a crested of good weight between 6months to a year old would be alright for the big tank. Implement at least 3 feeding stations. Try and find a breeder that knows his/her stuff. Pangea has a great forum for crested geckos and they have a lot of great reputable breeders...
The 12x12x18, is it an Exo terra like the one you showed? I think that would be a much better option for a baby. You can always move up to the larger tank once the crested gets a bit older. I would still try to implement 2-3 feeding stations at first.
