Your diet is good but were did you hear that bok choi is bad? It's very good for them and there is nothing wrong with it. I have heard that spinach has some problems but never bok choi.

They don't "enjoy" it, they just tolerate it. Feeding veggies is a very good idea. A mix of fruit and veggies is also good. The soaking is a very bad idea. Its to much water and they will develop scale rot. good luck with your new uros.
