LOL. all THREE of my geckos do that!!!! but they don't just stop striking at one. they will try for HOURS. literally. thet are so stupid sometimes, i sat there and watched them for a least an hour one time and they never figured out how to eat them. i finally had to just drop them on the floor...
you can get a temp gun, or you can tape the probe down on the carpet to make sure your gecko doesn't move it.
also, you can get a light dimmer or thermostat to control the hot temps if it's still hot above the carpet. if you cant get those right away pile a bunch of paper towels over the UTH...

i realize you live in california, and it's not exactly cold there, but aren't you worried that having her out so much / bringing her outside and in stores is very very bad for her because of the difference in temperatures and might be one of the reasons she is/was sick?
