incubator problems

What are some of the thermostats you can use for the fridge incubator. the incubator consist of 3ft of 11inch heat tape on the inside of the fridge, and the heat tapes plug goes through the back of the incubator. The fridge is 4ft tall and 1 1/2ft wide, i have two 6quart tubs of water at the bottom. i had a old helix hooked up to the fridge and i adjusted the helix to 57degrees and the temp in the fridge went up to 104degrees could that helix be too old?

i had it hanging in the middle of the fridge.

I'd say there might be something wrong with your thermostat. Give it a few more tests, let it calibrate over night and if you still are getting crazy fluctuations it's time to replace it. I'd recommend either a new helix, a herpstat, a ranco, or a Johnson's.
